Our tasting menu is a focused expression of this region—driven by seasonality, local producers, and the quiet obsession of chef Evan Hayter cooking for a limited number of guests. The flow of the menu moves beyond convention, allowing each course to unfold naturally and without interruption. This is dining as we believe it should be: considered, intimate, and deeply connected to place.
Due to the scale of our kitchen and the nature of the experience, dietary requirements are extremely limited and can impact the entire dining room. We strongly encourage guests to experience the menu as intended; dietary requests notified in advance will be considered where possible. Please enquire via email prior to booking.
